We did a snow camping in Feb 2015 in Black Canyon of the Gunnison National Park. It was fun, enjoyable and also solitude. The park is not easy to photography. Snow certainly made the photos more interesting.
The best location to photograph the canyon, in my opinion, is Cedar Point. The second good location is Painted Wall View. They both are good for sunrise and sunset. The key is cloud though.
